BUTTER BAKED POTATO ROUNDS



Besides being tender and tasty, these potatoes are very simple and quick to prepare.
They pair well with grilled chicken.


I love sauteed onions so I make a generous amount.


Slice potatoes in the amount you need and arrange in rows in glass baking dish.


Top with golden sauteed onions.
Sprinkle with your favorite seasonings and pop into the oven,
or bake on the grill.


I don't use the microwave to cook but this time I was in a big hurry.
I decided to use that method and these potatoes tasted just as good as
if I had baked them in the oven.


1/4 cup butter or margarine
1/4 cup chopped onion

Saute onions in butter until transparent and golden.

4 large potatoes, peeled
2 tbsp. water
1/2 tsp. parsley flakes
1/4 tsp. seasoned salt
1/4 tsp. salt

Slice potatoes crosswise into 1/4-inch thick slices.
Fan out in rows in a buttered 8 x 11-inch baking dish or casserole,
with slices overlapping.  Add water;
spread onion mixture evenly over potatoes.
Sprinkle with seasonings.
Bake at 350° for 50 minutes or until potatoes are tender and slightly golden.
Note: if using the microwave method; cover potatoes with
plastic wrap or glass lid.
Cook on medium high for approx. 20 minutes or until potatoes are tender.
Let stand, covered for 5 minutes.
