CAMPFIRE BEANS


This dish tastes great anytime but even more so sitting around a campfire
on a summer evening  .... or at a picnic ... or by the lake.


A good beginning ... beef, celery and lots of onions.


A few more choice ingredients  ... stir together and bake.


Serve with a crusty roll or spoon over a baked potato.
Add a salad and enjoy a full-of-meat baked bean dinner.

½ lb. ground beef
1½ cups finely chopped onion
¾ cup finely chopped celery

Cook and stir ground beef, onion and celery until meat is brown and
onion is tender.  Drain off fat.

1 can (14oz.) molasses-style baked beans
¾ cup ketchup
1/3 cup beef broth
1½ tbsp. prepared mustard
1 garlic clove, minced
1 tsp. salt
¼ tsp. pepper

Combine beef mixture and remaining ingredients in Dutch oven or
casserole dish. Cover and bake in 375° oven for 45 to 55 minutes
or until hot and bubbly.

5 slices bacon

Fry bacon until crisp, drain on paper towel.
Crumble and sprinkle over beans before serving.
