FRUIT SMOOTHIE

Craving something icy on a hot summer day?
This frosty cold smoothie is equally delicious using fresh or frozen fruit.

Today I used peaches, strawberries, pineapple and oranges.

It may not turn into a smoothie all at once.
Pulse a few times and stir with a wooden spoon.
Repeat the process until it is silky smooth .... or not so smooth,
whichever you prefer.

If you have leftovers, ladle into small freeze containers and pop
into the freeze for a quick snack later.
Thaw for 20 seconds in the microwave and they are perfect to eat
with a spoon.

So refreshing out on the deck among the flowers.

Add some cold ginger ale or club soda and turn it into
a sparkling summer drink.

FRUIT SMOOTHIE

2 cups fresh or frozen peaches
2 cups fresh or frozen strawberries
1 can (14 oz.) pineapple chunks, including juice
1/2 cup mandarin orange sections
1/4 cup sugar
(more or less to taste)
6 to 8 ice cubes

Partially thaw fruit if frozen.
Blend fruit, sugar and ice cubes together until smooth.
Serve immediately or freeze for later.
Or spoon into drinking glasses 2/3 full;
add ginger ale or club soda for a refreshing drink.
