SANDWICH THINS


I'm back on my blog doing something I enjoy a lot but
couldn't seem to make happen any sooner.  Being far from home
 and my familiar computer is the main reason.
Having my daughter doing most of the cooking while I end up
doing the dishes is another.
We have an excellent working relationship!
She knows I love the thin sandwich buns that are available
in US grocery stores but not in Canada that I know of.
While I helped her in the making of these, she gets the credit.
With a shell of dough that is homemade, the sandwich
is healthy and very delicious!

After the dough is ready to be formed, divide into
15 pieces and shape into balls.


Roll each portion into a thin circle.


Place onto a parchment-lined baking sheet.
Just before baking, prick with a fork.

If you forget the fork-step, this will happen...
an unexpected pita bread!
Without even trying!


Carefully slice the flat bread in half using a sharp knife
and going around the edge with short slices.
After the bread is opened around the outside, slice into
middle to open completely.


SANDWICH THINS

1 pkg. active yeast (1 tbsp.)
1 1/3 cups warm water
1 tsp. sugar

Dissolve yeast and sugar in warm water.

2 cups whole wheat flour
1 cup white whole wheat flour
1/2 cup wheat bran
1 tsp. salt

Blend dry ingredients and set aside.

1 egg
2 tsp. canola oil
1/4 cup brown sugar

In a mixing bowl, beat egg, oil and sugar together.  Add yeast and
mix together.  Add 1 1/2 cups of the dry ingredients and mix until
thoroughly combined.  Cover and let rest for 1 hour.
Add remaining dry ingredients and knead for 5 minutes using
additional flour if necessary to make a dough that is easy to handle.

Divide dough into 15 or 16 equal portions; roll into balls.
With a rolling pin or pizza roller, roll into thin 4-5 inch rounds.
If desired, brush tops with water and sprinkle with bran,
pressing down lightly to make bran stick.
Place on parchment lined baking sheets; allow to rest for 30 minutes.
Prick rounds with a fork and bake in preheated 350 degree oven
for 10 to 12 minutes.  Do not overbake!
